We are delighted to host the crew from Yellow Billy Restaurant who will create their trademark skill of cooking over fire, serving a mouth-watering menu to share, artfully matched with some incredible wines from the Tyrrell’s cellar.
According to legend Yellow Billy was a Gentleman Bush Ranger who roamed the Hunter Valley areas of Broke and Pokolbin during the 1860s. Yellow Billy was a pseudonym for William White.
He was an early forager who allegedly lived off the land and slept in caves hidden in the Brokenback Ranges. It was here this native desperado cooked on fire to survive.
He is immortalised each time the Yellow Billy crew ignite the fire in his honour with the backdrop of the Brokenback Ranges in sight.
