Wine Education with Scott Richardson: To decant, or not to decant?

Putting it simply, decanting is essentially the process of pouring (decanting) the contents of a bottle of wine into another vessel (typically a decanter). Sometimes the wine is then served from the decanter but equally it is just as effective to decant the wine back into the original bottle for service. Today, decanting wines seems a somewhat arcane and old fashioned process rendered unnecessary by the increasing demand for wines designed to be drunk in their youth and less formal attitudes to dining. So when to decant? Firstly older red wines can throw off sediment as they age. Decanting your…

Wine Education with Scott Richardson: Wine Tasting vs Wine Drinking

The difference between wine tasting, as opposed to wine drinking, is that wine tasting involves concentration and consideration. With wine tasting you are attempting to be objective, only by putting away your subjective thinking i.e. “Do I like this – or not?” A better understanding and appreciation of fine wine involves exposing yourself to the many different styles and varieties of wine found throughout the world. In doing this, you may even find your own tastes broadening. Wine tasting Wine tasting, put simply, is the sensory examination and evaluation of wine. Wine consists of a complex myriad of substances including…

Wine Education with Scott Richardson: What happens to wine as it ages?

What happens as wine ages? How do you know when it will be best to drink? Over time flavours, aromas, and colours change. Whether the wine will benefit from these changes will depend on many factors, chief of which is personal taste. Not every wine will benefit from ageing. A wine made to be opened immediately, as most wines are, will lose its fruit character if you cellar it too long. Wines made to age can be unpleasant to drink young as to age they require relatively high levels of tannin and acid. Tannins are found in the skins and…

Wine Education with Scott Richardson: Old Vines = Fine Wines

Grape vines’ can and do produce fruit in their very first year but it generally takes between four and seven years to get fruit decent enough to make tolerable wine, 10-20 years to achieve a balanced vineyard and 40 years to make truly exceptional wines. The grape vines youth can be described as being vigorous but erratic, achieving “balance” somewhere between 10 and 20 years of age. Balance in grape vines is very important and it relates broadly to the vine producing just the right amount of fully mature fruit to make great wine, with the right amount of working…

Wine Education with Scott Richardson: The history of the oak barrel

Apart from maybe a bottle or glass, no other image is as synonymous with wine as that of the oak barrel. But apart from evoking nostalgic thoughts, the actual historical development and modern practical uses of oak barrels remains an active mystery to many. In historical terms, early wooden barrels were created solely due to the need for a sturdy storage vessel, something able to both store and transport liquids. Not just wine – but for any kind of trade good. Wooden storage vessels, regardless of their design, have been around for quite a while. Predated by pottery or ceramic…

The Hunter Reds lived up to the hype of the 2014 ‘Vintage of the Century’ where, as Bruce Tyrrell said, we have “possibly the best [wine] of both this and last century”.
